Butternut Squash and Duxelles Casserole

I have to admit when I think of casseroles I think of something, something and noodles.  Vegetarian Times Mag had this interesting recipe for Butternut Squash in this months issue.  I tried the cheese sauce while I was cooking everything and thought, omg..ew but the flavors blended well together.

Ever peel a butternut squash?  I swear I got a callus from the knife.  If anyone knows of an easier way to skin & chop a squash, do tell!!  I won't be eating this often but it was yummy.

  1. You could soften them first in the microwave. Some squash I cook until they are done and then scoop them out with my ice cream scoop. But if you need them hard for a recipe then you could try and first cut them in to rings with a heavy knife or cleaver. then cut the rings in half so you two crescent shapes. then take your knife and cut through the flesh stopping at the inside of the peel.That will make it look like you have a batch of pumpkin teeth attached to the peel. You should then just be able to run your knife along the inside of the peel to loosen the teeth from the peel. I do this with Muskmelon when I want chunks instead of slices. Hope that helps. I know some squash can be a bear to peel and some squash peels just are not palatable.
